Country Style Stuffed Peppers
Ingredients
- 1 1/2 cups cooked rice (I like to use Chicken Rice-a-roni)
- 1/2 lb hamburger
- 1/4 cup chopped onion
- 4 peppers (green, red or yellow)
- 2 cups mild cheddar cheese
- 1 medium tomato, chopped
Preheat oven 375 degrees Cook hamburger with onion, drain. Stir in rice, 1 1/2 cup cheese and tomato. Wash and cut Peppers in half (like a boat). Fill peppers with mixture and top with remaining cheese. Arrange in a baking pan; add 1/4 cup water.Bake for 30 minutes or until peppers are tender.
